The meat is from cattle of the Wagyu breed, sometimes referred to as Kobe beef and has its origins in Japan. It stands out from the competition due to its unique culinary applications and is one of the most exclusive and expensive meats in the world. Patxi Garmendia, who fell in love with these animals, began importing pure stallions and embryos more than 15 years ago to Spain. After much work, they were able to create their own genetics using a selection of animals from the purest Wagyu lines, the “Santa Rosala” Wagyu.
