Langoustines, also known as Norway lobsters or Dublin Bay prawns, are pale orange-pink crustaceans that resemble lobsters but are significantly smaller. In the past, they were coated in breadcrumbs and served with chips as scampi, but in recent years, their sweet, lobster-like flesh has earned them a place on the menus of fine restaurants across the country. Langoustines flourish in cold water and are abundant in the lochs of Scotland. In fact, more than a third of the world’s langoustines are captured in Scotland, but many are transported to other nations.
