Uruguay has been a leader in sustainable cow ranching for decades, long before it was trendy. Its vast pastures are perfect for raising cattle because they sit atop one of the world’s largest freshwater aquifers and are free of pollution. Here, we work with tiny family farms where gauchos care after their Black Angus cattle and the grasslands they graze on. The cattle graze exclusively on nutrient-rich grass. The result is leaner, tender beef high in Omega-3 fatty acids than grain-finished beef.
