Kobe Beef is a type of Wagyu, raised in Japan’s Hyōgo Prefecture according to a set of rules designed to improve taste, tenderness, and fat, well-marbled texture. Kobe beef is usually considered one of the main three brands (Sandai Wagyu, “the three big beefs”), alongside Matsusaka beef and Ōmi beef or Yonezawa beef.
